Yesterday we showed you some sweet and easy cookies that we made for our Super Bowl feast this year, and today we’re going to feature something else from the big game – these cheesy stuffed chips!  They’re crispy and fried, as all good game day food should be, and inside you get a nice bite of gooey melted cheddar cheese.  We also added some additional seasoning to this mix to give our chips a slightly spicy kick.  Cyril came up with this idea entirely on his own and it came out great, so we’ll show you how to whip these up for yourself.

You’ll need:

You’ll first want to make the dough for these chips:  measure out 2 cups of masa and stir in a teaspoon of hot adobo seasoning.  Then warm 1 1/2 cups of water in your microwave for 20 seconds and dissolve in 2 bouillon cubes, then add this to the masa and mix until you have an even dough.

Next, divide the dough into eight equal pieces.  Take one piece and roll it out between two sheets of wax paper until it’s about 6 inches wide.

Now cut a 1/4-inch slice of cheese and cut it into triangles.  Place a triangle of cheese on the dough and use a sharp knife cut out two triangles of dough that are slightly larger than the piece of cheese.  Place the cheese between the two triangles.

Then press the edges of the two pieces of dough together to seal the cheese inside, and use a fork to crimp the edges together.  If any tears in the dough appear, use your fingers to close those tears so no cheese escapes as you’re frying your chips.

Repeat this process of rolling out the dough, cutting dough triangles and pieces of cheese, and stuffing the cheese between the dough until you’ve used up all your dough – and if you have any scraps left over from cutting out pieces of dough, just add them to the next ball of dough you roll out and continue.  When you’ve got all your chips stuffed, pour enough oil into a Dutch oven or another heavy, deep pan to come 1/2 inch up the side of the pan.  Warm the oil over medium-high heat until it reaches 350°F (you can use a candy thermometer to check the temperature), then place in 6 chips at a time to fry.  Let them cook about a minute on one side, then use a slotted spoon to flip them over and cook for another minute, until they’re lightly browned all over.  Scoop the chips out of the oil with your spoon, place them on paper towels to absorb the excess oil, and sprinkle with salt and extra adobo while they’re still warm.  Repeat until all the chips are fried, and once they’re cool enough to handle you can serve them up!

These chips hit all the right notes for some great Super Bowl fare:  they’re fried, they’re cheesy, they’re an excellent finger food – and they just happen to be vegetarian!  It’s nice biting into a crispy shell and getting a taste of melted cheddar inside, plus adding some spicy seasoning in the dough and on top gives a little bit of a kick to this snack.  And while the frying takes some careful effort, it’s nice that you can make these chips with just a few ingredients.  These were great for snacking on during the game, and we think our cheesy chips prove that Super Bowl food can be really good without relying on meat.
