On hot summer days like today, you want meals that are fast and easy and don’t force you to turn on your oven.  If it’s also a lazy weekend day, we’ve got something that perfectly fits the bill – these chocolate waffles.  It takes just a few minutes to whip up the batter, then you just have to scoop that batter into your waffle maker and bam!  Some nice cocoa-flavored waffles.  We adapted this recipe from the New York Times, and we’ll show you how we made this simple, tasty brunch for ourselves.

You’ll need:

  • Flour
  • Cocoa powder
  • Brown sugar
  • Baking powder
  • Baking soda
  • 2 eggs
  • Buttermilk
  • Vanilla extract
  • Butter
  • Whipped cream
  • Strawberries
  • Blueberries

To make your batter, first stir together 1 1/4 cups of flour, 3 tablespoons of cocoa powder, 1/3 cup brown sugar, a teaspoon of baking powder, 1/4 teaspoon of baking soda, and a pinch of salt.  Then take your eggs and separate the yolks from the white, placing the whites into a small bowl and the yolks into the center of your flour mixture.  Add a cup of buttermilk and a teaspoon of vanilla to the flour as well, then mix everything together.  Whip your egg whites by hand with a whisk until they’re frothy, then gently stir those into the batter as well.  Finally, melt 2 tablespoons of butter and mix in.

Heat up your waffle maker and brush some butter on it, then measure out 2/3 cup scoops of batter.  Cook all your waffles (we used a 4 setting on the waffle maker and they came out great).

Now you can cut some strawberries in half and use them, plus some blueberries, to top your waffles.

And you can add some whip cream as well, and dust everything with a little more cocoa powder.

This quick recipe makes for some pretty colorful waffles, as you can see.  They’re not too intensely chocolatey:  the cocoa powder adds an interesting but not overpowering flavor to the waffles, which balances nicely with the fruit and whipped cream on top.  And if you’re wondering why you bother to separate the egg yolks and whites and then whip the whites, it’s because this gives a lighter and more airy texture to the waffle batter, which makes for less dense and more crispy waffles.  This is the perfect oven- and stovetop-free meal for a warm weather morning when you don’t have the time or the inclination to cook something complicated, but still want some interesting and tasty food on your plate – so try it out this summer.
